A quick, meatless chili built on soy chorizo, black beans, and a simple blend of warm spices.

INGREDIENTS
6 SERVINGS- 2 packagessoy chorizo, casings removed
- 3 clovesgarlic, minced
- 1/4 cupred wine
- 4 cans (15 oz each)black beans, drained
- 2 cans (14.5 oz each)diced tomatoes
- 1 palm fullcayenne pepper
- 1 palm fullcumin
- 1 palm fullchili powder
- 5 shakesTabasco or Tapatío sauce, optional, for heat
INSTRUCTIONS
4 STEPSIn a Dutch oven or large pot, sauté the soy chorizo with the garlic until the garlic is soft and translucent.
soy chorizo · garlicDeglaze the pot with the red wine, using a wooden spoon to scrape up anything stuck to the bottom.
red wineAdd the diced tomatoes, cayenne, cumin, chili powder, and hot sauce (if using) and mix well. Add the drained black beans and let simmer until bubbling.
