Turkey Stock
A rich, unsalted turkey stock simmered from the neck and backbone, ready for gravy, stuffing, and more.
INGREDIENTS
8 SERVINGS- 1turkey neck
- 1turkey backbone, cut into 3 to 4 pieces
- 2 tbspneutral oil
- 1large yellow onion, roughly chopped
- 2carrots, roughly chopped
- 2celery stalks, roughly chopped
- 4garlic cloves, smashed
- 1small bunch parsley stems
- 4 sprigsfresh thyme
- 2 sprigsfresh rosemary
- 2 sprigsfresh sage
- 1bay leaf
- 1 tbspwhole black peppercorns
- 1 galloncold water
INSTRUCTIONS
6 STEPSHeat a large stockpot over medium-high heat and add the oil. Add the turkey neck and backbone and brown well on all sides, about 8 to 10 minutes. Transfer the turkey pieces to a plate.
8–10 MINturkey neck · turkey backbone · neutral oilAdd the onion, carrots, and celery to the same pot. Cook for 5 to 7 minutes, stirring occasionally and scraping up the browned bits from the bottom of the pot. Add the garlic and cook for 1 minute more.
6–8 MINlarge yellow onion · carrots · celery stalks · garlic clovesReturn the turkey neck and backbone to the pot. Add the parsley stems, thyme, rosemary, sage, bay leaf, and peppercorns, then pour in the cold water. Bring to a boil, then immediately reduce the heat to maintain a gentle simmer.

Continue cooking until the stock has reduced by roughly half, leaving about 2 quarts. Don't add salt — keeping the stock unsalted gives you control when using it for gravy, stuffing, and other dishes.
Pour the stock through a fine-mesh strainer into a large heatproof container. Discard the bones, vegetables, and herbs.
Cool the stock, then refrigerate. Once chilled, you can remove the solidified layer of fat from the surface. Refrigerate for up to 4 days or freeze for longer storage.
Notes
- If you're making this alongside the Herb Butter Roasted Turkey, make the stock the day before: spatchcock the turkey, season it, and place it uncovered in the fridge to dry brine overnight, then use the neck and backbone you removed to make this stock the same day — you'll have stock ready for gravy and stuffing when you roast the turkey the next day.
