Roasted Fingerling Potatoes with Fresh Herbs and Garlic

Crispy-outside, tender-inside fingerling potatoes roasted with whole garlic and fresh herbs.

  • 2 pintsfingerling potatoes
  • 2 sprigsfresh rosemary
  • 2 to 3 sprigsfresh sage
  • 3 sprigsfresh thyme
  • 6 clovesgarlic, left unpeeled
  • 3 tbspextra-virgin olive oil, plus more for the sheet pan
  • salt and pepper, to taste

INSTRUCTIONS

  1. Preheat the oven to 500°F and place a baking sheet inside to heat.

  2. Toss the potatoes, rosemary, sage, thyme, and garlic in a bowl with the olive oil, and season with salt and pepper. Remove the hot sheet pan from the oven, coat with olive oil, and pour the potatoes onto it. Return to the oven and reduce the heat to 425°F. Roast until crispy outside and tender inside.
