Roasted Brussels Sprouts with Bacon & Balsamic Onions
Charred roasted brussels sprouts tossed with crispy bacon and a balsamic caramelized onion glaze.
INGREDIENTS
10 SERVINGS- 12 slicesbacon, diced
- 2 tbspunsalted butter
- 2medium red onions, diced
- 4 clovesgarlic, minced
- red pepper flakes, a pinch
- 6 tsplight brown sugar
- 2/3 cupbalsamic vinegar
- 8 cupsbrussels sprouts, trimmed and halved
- 2 tbspolive oil
- salt and pepper, to taste
INSTRUCTIONS
6 STEPSPreheat the oven to 425°F.
Heat a large skillet over medium heat and add the diced bacon. Cook until rendered and crispy, then remove with a slotted spoon and set aside on a paper-towel-lined plate.
baconDiscard all but 1 tablespoon of the bacon drippings, add the butter, then add the diced onion and a pinch of salt. Cook until beginning to caramelize.
15 MINunsalted butter · medium red onionsMeanwhile, place the brussels sprouts on a large rimmed baking sheet, drizzle with olive oil, and season generously with salt and pepper. Roast, tossing halfway, until charred in spots and tender.
25 MINbrussels sprouts · olive oil · salt and pepperOnce the onions are golden and caramelized, add the garlic, red pepper flakes, sugar, and balsamic vinegar. Cook, stirring frequently, until the vinegar is mostly reduced and the mixture is thickened and glossy. Taste and season with salt and pepper.
