Garlic Butter Steak and Potatoes Skillet

Juicy marinated steak strips and crisp-golden potatoes, pan-seared together in a garlic butter sauce.

INGREDIENTS

4 SERVINGS
  • 1 1/2 lb (650g)flank steak, sliced against the grain (or ribeye, tenderloin, strip loin, or strip steak)
  • 1 1/2 lb (650g)baby yellow potatoes, quartered
  • 1 tbspolive oil
  • 3 tbspbutter, divided
  • 5 clovesgarlic, minced
  • 1 tspfresh thyme, chopped
  • 1 tspfresh rosemary, chopped
  • 1 tspfresh oregano, chopped
  • salt and fresh cracked pepper, to taste
  • crushed red chili pepper flakes, optional
  • 1/3 cupsoy sauce, or coconut aminos, for the marinade
  • 1 tbspolive oil, for the marinade
  • 1 tbsphot sauce, we used Sriracha, for the marinade

INSTRUCTIONS

  1. Combine the steak strips with the soy sauce, olive oil, pepper, and hot sauce in a large bowl. Set aside to marinate while you cook the potatoes.

  2. In a large skillet over medium-high heat, mix the olive oil and 1 tablespoon of the butter. Once melted, add the potato wedges and cook, stirring, until golden and fork-tender. Transfer to a plate and set aside.

  3. Keep the skillet over medium heat and add the remaining butter, garlic, and fresh herbs. Lay the steak strips in one layer in the skillet and cook on each side until nicely browned, adjusting the timing to your liking.

  4. Stir in the reserved marinade if desired, then add the potato wedges back to the pan and heat through.

  5. Remove from heat and serve immediately, garnished with fresh herbs and a sprinkle of Parmesan over the potatoes, if you like.

Notes

  • Precook the potato wedges in boiling salted water for 8 minutes before browning to accelerate cooking, if desired.
  • Avoid crowding the pan with steak strips. Proceed in batches if necessary so you get a nice golden crust.
