Garlic Butter Smoked Prime Rib

A bone-in prime rib roast slathered in garlic herb butter, smoked low and slow, then seared for a crust.

  • 1 8-10 lbbone-in prime rib roast
  • coarse salt and pepper, to taste
  • 16 ozsoftened butter, for the garlic herb butter
  • 8 clovesgarlic, minced
  • 2 sprigsrosemary, finely minced
  • 2 sprigsthyme, finely minced
  • 2 tspsalt, for the butter
  • 2 tspblack pepper, for the butter

INSTRUCTIONS

  1. Preheat your smoker to 225°F for indirect cooking, using a hardwood like oak or hickory.

  2. Trim any excess fat from the top of the roast down to about 1/4 inch thick. Season on all sides with an even sprinkling of salt and pepper.

  3. Combine the softened butter, garlic, rosemary, thyme, salt, and pepper in a small bowl. Slather the entire roast with the butter mixture.

  4. Place the roast on a flat rack elevated above a baking sheet, place on the smoker, and close the lid. Smoke until the internal temperature reaches 120°F for rare or 128°F for medium. Plan on about 35 minutes per pound.

  5. Remove the roast to a cutting board and let rest.

  6. While the roast rests, increase the temperature of your grill to 400°F.

  7. Return the roast to the grill and sear until you reach your desired final temperature. Pull at 130°F for rare, 135°F for medium-rare, or 140°F for medium. This goes quickly, so keep a close eye on the temperature.

  8. Remove the roast to a cutting board and let rest before slicing and serving.

  • Plan on about 35 minutes per pound for a bone-in rare roast.
