Brussels Sprouts With Pancetta

A marvelously flavorful dish of glazed brussels sprouts, rich with garlic and salty pancetta.

INGREDIENTS

8 SERVINGS
  • 1 1/4 cupsfresh bread crumbs
  • 2 tspthyme leaves
  • 6 tbspextra virgin olive oil
  • 4 tbspunsalted butter
  • 2 poundsbaby brussels sprouts, washed and trimmed, larger ones cut in two
  • salt and pepper, to taste
  • 6 ounces (1 1/2 cups)pancetta, in small dice
  • 3 tbspshallots, minced
  • 1 tbspgarlic, minced
  • 1/2 cupbalsamic vinegar
  • 1/2 cupveal stock or rich chicken broth, more if needed
  • 2 tbspparsley, chopped

INSTRUCTIONS

  1. Heat the oven to 350°F. In a bowl, mix the bread crumbs and thyme leaves. Spread on a cookie sheet and toast, tossing frequently, until golden brown.

  2. Heat the butter and remaining olive oil in a large skillet over medium-high heat until foamy. Add the brussels sprouts, sprinkle with salt and pepper, and sauté, tossing frequently, until lightly browned, about 5 minutes. Add the pancetta and sauté, tossing frequently, until the sprouts are well browned and softened slightly and the pancetta is crisp, about 10 minutes more. Reduce heat, add the shallots and garlic, and sauté until fragrant, 2 minutes.

  3. Increase heat to high, add the balsamic vinegar and stock, and cook, tossing frequently, until the sprouts are glazed and tender, about 10 minutes. Add more stock if needed. Taste and adjust seasoning, then sprinkle with chopped parsley. Transfer to a warm serving bowl and scatter the toasted bread crumbs on top.

Notes

  • Some cooks prefer sautéing the pancetta, garlic, and shallots together first before adding the sprouts.
